An quick and easy way to get lots of protein. An quick and easy way to get lots of protein.
Number of Servings: 1


    1 large egg
    1 egg white from another large egg
    1/4 cup of spinach
    1/4 cup of chopped mushrooms, (any variety)
    Cheeses (I don't actually measure, but I take small dashes of each--mozzarella and Parmesan cheeses)
    dashes of pepper, salt, and I like a little "heat" so I do a dash of cayenne pepper.


Combine all ingredients in bowl and beat until all mixed together. Pour into skillet sprayed with olive oil spray and cook until bottom is firm. Fold in half and cook until eggs are completely cooked. This can also be prepared by mixing eggs and seasonings, cooking and then folding spinach and mushrooms & cheese as you fold the omelet.
