    Make a yummy Mexican meal using:

    Small Corn Tortillas (6 in)
    Fat Free Mexican Cheese (or cheddar),
    Black Beans (One can)
    Olive Oil Cooking Spray
    Garlic (2 teaspoons)

    Fat Free Sour Cream


This is a very easy dish, you make make a serving for 2 or 6..

Get a pan and lightly cover with Olive Oil spray and put on high heat.

Open a can of black bean, (NOTE: You have to options, if you like lumpy refried beans, first pour out 1/3 of the water and then pour context of can in pan, smash the beans in the pan as you cook over high/medium heat. If you like a smooth consistency first place in blender and then pour in hot pan.)

Add some garlic, salt and pepper.

Contentiously stir the beans around pan making sure they don't burn or stick to much to the pan. Lower to medium heat. Keep moving the mixture around until it shrinks to half its original size and become more like a think paste / ball in pan.

When finished turn off heat and move the beans to the side.

In a new pan lightly cover with olive oil spray and put on medium heat.

On the counter top put a plate with a hand towel big enough that it can easily cover and be folded over and under the tortillas. Place a napkin where you plan to place the tortilas (in the fold) so the oil of the spray doesn't get on the towel.

When pan is hot place corn tortilla, turn in circular motions until tortilla is soft and warm, quickly flip over. (1 - 2 minutes each tortilla). When warm place in the fold of towel and cover to keep warm.

Repeat with each tortilla.

Now your ready to serve. -- Get the warm tortilla, place beans on the right side, lightly cover with 1/5 of a cup of cheese (or less to control calories), roll and serve. (Note you can pop it in the microwave or place the tortilla on the hot pan for a few seconds to melt the cheese )
