Introduction

This dressing works great over white fish, chicken and pork. sprinke with chopped pinapple and as my sister in law said " there is a whole lot of wonderful going on in my mouth".
(good as a dip for tortilla chips too).

Ingredients


    1 whole Avocados, California
    1 Scallions, raw, 1 small (green removed)
    1/2 -1 lbTomatillos, roasted
    1/2-1 cup Cilantro, (we love cilantro so we use 1 cup)


Directions

Remove husk from tomatillos, wash and roast under broiler for 8 min each side. Remove and place in blender, along with any juice from tomatillos. Add remaining ingredients, blend until very smooth.
serve over fish, chicken or pork. Sprinkle with crushed pineapple or chopped fresh pineapple.

depending on how much tomatillos you use depends on the amount it makes. I used 1 lb and it made over 3 cups.
