    500 gm lean ground beef
    4 medium potatoes, peeled & cut into chunks
    3 cloves of garlic
    Healthy Request Cream of Mushroom Soup, 1 can
    Mixed Vegetables, frozen, 1 cup
    Butter, unsalted, 2 tbsp


Peel and cut the potatoes into chunks. Boil with garlic cloves until potatoes are cooked.
Drain, but keep a bit of water in the pot so the potato/ garlic mix is not too dry.
Mash potatoes and garlic together. set aside
While potatoes are cooking, brown ground beef in a large skillet. Drain excess fat or juice.
Add mushroom soup and frozen vegetables to ground beef
Simmer 5 -10 minutes

Prepare a casserole dish by lightly spraying with low-fat cooking spray (I use a mix of olive oil & coconut oil in a spray bottle)
Pour beef/ veggie mixture into the casserole dish
Add mashed potatoes on top of the meat mixture, smooth out with a fork or spoon
Dab on butter to lightly coat the top, this will help it to turn a nice golden color
place in oven for 10 minutes at 400, then broil for a couple of minutes until the top is golden
