    1 tbsp olive oil
    1 cup whole wheat couscous
    1 cup plus 2 Tbsp low sodium chicken broth
    1 cup cherry tomatoes, quartered
    1/4 cup red onion. diced
    1/4 fresh dill, chopped


In a medium sauce pan, heat oil over medium high heat. Add coucous and stir until toasted; 1 minute. Add chicken broth, bring to a boil. Cover, remove from heat and let stand 5 minutes. Fluff with a fork. Stir in remaining ingredients.

Makes 4 servings.
