    11/2-2lbs skinless, boneless, chicken breast(cut into smaller pieces)
    1 Stick butter
    1/2 cup olive oil
    1/2 cup white wine
    1/2 cup sundried tomatoes
    1/2 cup lemon juice
    2 T parsley
    1 pk. fresh mushroomsSliced)
    1 cup chicken broth


Cut chicken in smaller pieces and flour.

In large skillet, melt butter and olive oil.

Place floured chicken and cook turning only once.

Remove chicken and put in a pan.

Using same skillet, add white wine, cook 2 minutes.

Then, add sundried tomatoes, lemon juice, parsley, salt& pepper, mushrooms, and chicken .

Pour over chicken(can be frozen at this point).

Bake COVERED at 350 for 30 minutes until hot and bubbly.

For 2-3lbs chicken add more butter and oil and toatoes and mushrooms as needed.
