    3/4 cup chopped tomato
    3 tbsp chopped onion
    5 kalamata olives
    3 tbsp chopped fresh basil
    1.5 tsp balsamic vinegar
    1/2 tsp salt
    1/4 tsp pepper
    1.5 cup fat free egg substitute
    1.5 tbsp grated parmesan cheese


1. Combine the tomato, onion, olives, basil, vinegar, salt and pepper in a bowl.
2. Lightly spray a medium nonstick skillet with nonstick spray; heat over medium heat until a drop of water sizzles. Pour in the egg substitute and swirl to cover the pan. Cook stirring gently, until the underside begins to set, about 3 minutes. Sprinkle with the cheese and cook 1 minute longer. Spoon the tomato mixture evenly over one side of the omelet; fold the other half over the filling and heat to serving temperature about 1 minute.
