    1 10oz pkg. Spinach - baby spinach preferred -
    1 Red Ripe Tomato, sliced
    1 Small onion, diced
    1 clove garlic, minced
    1 Tbsp. Olive Oil
    4 Large Egglands Best Eggs plus 4 egg whites
    2 oz finely shredded low fat cheddar or colby cheese; or any other type of low fat cheese preferred.
    Frank's RedHot Original Cayenne Pepper Sauce as garnish(optional)
    Salsa (optional)


Preheat oven to 325 degrees.
Wash spinach, drain well or spin in salad spinner to remove excess water.
Mince garlic, chop onion, slice tomato
In saute' pan, add oil and garlic, saute over med heat just till aroma from garlic rises - do not brown - add diced onion and saute till soft.
Add spinach, cover and let steam until wilted, stirring every couple minutes.
Beat eggs, add spinach mixture when cooked.
Oil small casserole dish, pour in egg/spinach mixture.
Cut tomato slices in half, arrange on top of egg/spinach mixture in chevron pattern to fit as many slices of the tomato tightly together as you can.
Bake for 20 - 25 minutes, test center for doneness. Once center tests clean, top with cheese, return to oven, shut off oven and let sit until cheese is melted.
Cool slightly, cut into four servings, serve with Hot Sauce and Salsa as a choice of garnish. My preference is the Hot Sauce.
