Ingredients

    1 Cucumber (peeled, leaving stripes), sliced in 1/4" slices
    1/4 c. Onion, very thinly sliced
    1 tbsp Cilantro, chopped
    6 Shrimp (large), cooked, Chopped into 1/2" sections
    10 tbsp. Seasoned Rice Vinegar
    2 pkts Stevia or Truvia (to taste)
    dash sea salt

Directions

Add first 4 ingredients into serving dish. In separate dish, mix seasoned rice vinegar, salt and Stevia or Truvia to taste. Add dressing to main ingredients and refrigerate for at least 2 hours. This is a great salad to fix ahead of time! As it marinates, the flavors become more intense.

Variations: Add chopped nuts and/or rice noodles, keeping in mind, these add a lot more calories.
