    3 cups Brussels sprouts leaves
    1/3 cup dried cranberries
    1/3 cup sliced almonds
    1/2 cup chopped Medjool dates
    1/4 cup shredded manchego cheese


Remove leaves from Brussels sprouts stems. (We couldn't get ours to peel all the way down, so we saved the yummy tender insides for another meal.) Blanch until bright green and just crisp-tender, probably less than a minute. Drain and submerge in ice bath. Drain again (or spin in salad spinner) when completely cooled. Toss with remaining ingredients. Dress with honey mustard or mustard vinaigrette. A balsamic vinaigrette might also be nice. (Dressing not included in nutrition information.)

  • Great recipe! I toasted the almonds before adding and toasting increases the nutty flavor. Did not add the cheese but was excellent without. Easy to make. - 1/21/15
