Introduction

Ingredients

    2 cups of Eggland's Best Eggs
    6 cups of Frozen Potatoes O'brien
    1 cup of extra lean ham, diced
    1 cup of finely chopped onion
    4 cloves of finely chopped Garlic
    1 Cup of Diced Low Fat Cheddar or Colby Cheese

Directions

Preheat oven to 350 degrees
Spray 8x8 inch square baking pan with nonstick cooking spray
Spread hashbrowns on bottom of pan and cook in oven for 15 minutes
In skillet or microwave cook onions, until softened
Remove pan of potatoes from oven, put vegetables and shredded cheese on top
Pour eggs over top.
Can be stored in fridge overnight at this point.
Bake (can cover with foil if you like) 35 minutes or until knife inserted in center comes out clean.
Cut into 8 squares , makes 8 servings
