I have made changes to this. I found that the original version was just too much food. So I cut it down to 1 sausage patty, and 1 slice of cheese and no mayo for each sandwich. BFC S/C Value=3/2

Ingredients

4 breakfast sausage patties
8 whole eggs
1/4 cup half-and-half
1 tbsp. butter
4 whole grain wheat english muffins
4 slices cheddar cheese
Directions
1. Cook the sausage according to the package directions; set aside.
2. Whisk the eggs with half-and-half, and season to taste. Melt the butter in a large skillet over medium heat. Add the eggs mixture to the pan, and scramble until just cooked.
3. Toast the english muffins, then spread each with mayo. Build each sandwich the bottom muffin, and top with a slice of cheese, 1 sausage patty, and 1/4 egg mix. Place the other half of the muffin on top.
4. Serve 1 sandwich per person.
