Number of Servings: 4


    2 whole eggs
    6 egg whites
    1 tbsp grapeseed oil
    1 10oz pkg frozen spinach
    1 md sweet onion, diced
    3 cloves garlic, minced
    1 tsp coarse sea salt
    .5 c shredded 2% mexican blend cheese


Makes 4 servings
1. Preheat oven to 375 degrees.
2. Microwave spinach for 3 min.
3. Saute garlic and onion in oil until translucent.
4. Add spinach, salt and saute until heated thru, about 5 min.
5. In a lrg bowl, beat eggs until foamy and doubled in size.
6. Grease muffin tins generously. Divide spinach and cheese into 8 muffin molds about 3/4 full. Pour egg mixture over spinach so each cup is nearly full.
7. Bake for 30 min, or until eggs are set and slightly browned on the tops.
8. When cooled, store 2 per Ziplock for breakfast throughout the week.
