    1 1/2 C Quaker Oats, uncoked
    1 1/4 C Whole Wheat Flour
    1/2 tsp cinnamon
    1 tsp Baking Powder
    3/4 tsp Baking Soda
    1/2 C Packed Brown Sugar
    1/2 C Skim Milk
    1 C. Unsweetened Applesauce
    1 TBSP Vegatable Oil
    2 Egg Whites
    2 small apples, chopped

    1 tsp white sugar
    1 tsp cinnamon


Combine all dry ingredients and stir with whisk, leaving a well in the center.

Combine all wet ingredients plus chopped apple and stir with whisk.

Add wet to dry and mix until just moistened. Fill greased muffin tins 3/4 full.

Combine extra sugar and cinnamon and sprinkle tops of muffins.

Bake at 400 for 20 minutes.

    I want to try this recipe, but I am a bit confused. I see no chopped apple in the ingredients list (only applesauce - which I interpreted as a wet ingredient), yet chopped apple is in the directions. Is this an omission of an ingredient or did you mean to say "apple sauce" in the directions. - 10/10/10

    So sorry!! Yes, I use 2 small chopped apples. I'll edit the recipie - thanks for pointing it out. Hope you enjoy!
