    1 1/2 cups of ground almonds
    2 T Erythritol
    5 drops of liquid stevia
    1/3 cup butter, melted

    3 (8 ounce) packages cream cheese, room temperature
    4 eggs, room temperature
    1 T vanilla extract
    1 cup Erythritol
    1/4 t liquid stevia
    1 t cream of tartar


1. Preheat oven to 350 degrees F.

2. Mix together ground almonds, 2 T erythritol, 5 drops of liquid stevia and butter. Press into the bottom and 1/2 inch up the sides of a 9-inch springform pan.

3. Mix together cream cheese and 1 cup Erythritol until smooth. Blend in the eggs, vanilla, 1/4 t stevia, and cream of tartar. Pour over crust.

4. Bake for 50 minutes, or until golden and the center is set. Allow to cool at room temperature, then refrigerate for at least 6 hours before serving.
