Ingredients

1 cup split peas
0.75 cup sliced carrots
0.75 cup diced onion
1 cup diced potato
6 cups water
2 bay leaves
salt to taste (add at the end of cooking)
Directions
Place all the ingredients into a large pot.
Bring the ingredients to the boil. Turn the stove down and simmer until the split peas are tender. (about 2 hours) Stir the pot occasionally to prevent the soup from burning. Mash the soup with a potato masher, just a little, to thicken the soup.
Season to taste once the soup is cooked. Adding the salt before the split peas are tender will stop them from becoming nice and soft.
Makes about 4 servings of just over 1 cup each.
Serve with whole wheat bread. A little sprinkling of cheese on top of each bowl of soup is a nice addition.
