    4 portabella caps
    1 Tbs olive or canola oil
    1 Tbs balsamic vinegar
    1/4 tsp oregano
    1/4 tsp thyme
    1 clove garlic finely chopped
    1 oz crumbled feta cheese
    1/2 onion , grated
    1 cup spinach, packed
    4 slices mozarella cheese.
    4 slices of tomato


Serves 4

in glass bowl mix oil,vinegar,oregano and thyme with the chopped garlic ,salt if you like
marinade mushrooms in this for an hour.

Meanwhile saute' the grated onion and the spinach until onion is browned and spinach is wilted. let cool then add the feta cheese. Remove the mushrooms from the marinade and divide the spinach mixture between the 4 mushrooms,top with one slice of tomato and the mozzarella.
Grill for apx.8-10 min.
