    2 lbs pork tenderloin, trimmed
    1/4 cup vegetable oil
    1/4 cup Thai fish sauce
    2-4 tbsps hoisin sauce
    5 cloves garlic, roughly chopped
    1/4 cup fresh cilantro leaves
    1 1/2 tsp ground coriander
    1 tsp kosher salt
    1 tsp red pepper flakes
    1 tsp ground black pepper

Place pork in a large plastic storage bag or in a large bowl with a lid. Combine remaining ingredients in a blender or food processor and pour over pork. Turn pork to ensure thorough coating with marinade and refrigerate for several hours or overnight. When ready to cook, remove from fridge and let come to temperature for about 15 minutes. Remove from marinade, shaking off excess, and discard marinade. Grill or broil tenderloins for 15 minutes, or to desired degree of doneness. Let sit for 5 minutes. Makes 6 servings.
