Introduction

Yummy comfort food served with mashed potatoes and steamed veggies. Leftovers (if you have any!) are excellent in a sandwich with a little melty cheese and shredded lettuce or crumbled into marinara sauce w/lightly cooked green pepper/onion (or what have you) over pasta or rice. Number of Servings: 6

Ingredients

    1 lb ground beef, lean
    2 large eggs
    1/3 c finely chopped onion
    1 c Italian style bread crumbs
    1/4 c grated Parmesan cheese
    1/8 tsp ground black pepper (or more to taste)
    1-1/4 c marinara sauce (divided usage)

Directions

1. Preheat oven to 350 degrees F.
2. In large bowl, combine ground beef, eggs, onion, bread crumbs, cheese and pepper.
Fold in one (1) cup marinara sauce (reserve 1/4 c for top).
With wet hands, pat mixture firmly into 8x4 loaf pan.
3. Spread reserved marinara sauce over loaf and bake for one (1) hour.
Let stand 10-15 minutes before cutting to serve.
