Introduction

This is a light pasta salad that pairs nicely with hamburgers, hotdogs, or pulled pork sandwiches... I don't like to add a lot of flavor seasoning wise because I enjoy the taste of the carrots and cucumber... Feel free to add seasoning as you see fit.... Ingredients

    1 box Whole Grain Medium Shells (13.25 oz)
    3/4 box Whole Grain Rotini (about 10 oz)
    1 1/4 cup Olive Oil Mayonase
    3 1/2 cups carrots, chopped
    2 cups cucumber, peeled and chopped
    2 teaspoons salt
    3/4 teaspoons black pepper
    4 teaspoons poppyseeds

Directions

Makes 24 1/2 cup servings
Cook shells and rotini to desired doness. Drain and cool with cold water.
While pasta is cooking, prepare carrots and cucumber by chopping into bitesized pieces.
When pasta is about room temperature or cooler mix all ingredients together.
Chill for 2 hours or until cold.
If you want to add different or more seasoning, feel free to as needed to pair with main dish... I make this with spicy pulled pork sandwiches so I enjoy a light flavor.
