Ingredients
-
* Spaghetti, cooked (pasta), 1.5 cup
* Chicken Broth, 2 cup (8 fl oz)
* Garlic powder, 1.5 tsp
* Spinach, fresh, 1 package (10 oz)
* Red Ripe Tomatoes, 1 cup cherry tomatoes
* Shrimp, cooked, 20 large
* Butter, salted, 1 tbsp
* Pepper, red or cayenne, 0.25 tsp
* Basil, 2 tbsp
* Parmesan Cheese, grated, 1 tbsp
Directions
Peel and De-vein shrimp, pat dry and sprinkle with cayenne pepper powder. Cook in frying pan with butter until pink.
Bring Chicken broth to a boil with garlic powder, add pasta. Cook for 5 minutes or until most of the chicken broth has been absorbed. Add spinach and cover until wilted. Add tomatoes and cooked shrimp. Toss with tongs to mix ingredients. Add basil (can use basil paste, I like Gourmet Gardens brand) and add parmesan.
Cook for another 3 minutes or until ingredients are heated through and chicken broth is fully absorbed. (If it seems like there is too much broth, you can also drain some out, before adding basil and pamesan.)
