    3 C canned beets, drained
    1/4 C red wine vinegar
    1/4 C chopped apple
    1/4 C chopped celery
    3 Tbsp balsamic vinegar
    1 Tbsp olive oil
    1 Tbsp water
    8 C fresh salad greens
    3 Tbsp chopped walnuts
    1/4 C gorgonzola cheese
    Black pepper to taste


Drain beets if using canned. If fresh beets, steam for 5-6 minutes until soft. Slip skins off. Slice into 1/2 " rounds.

In a medium bowl, add beets, apples and celery and toss with red wine vinegar. Set aside.

In a large bowl, combine balsamic vinegar, balsamic vinegar, olive oil and water. Add salad greens and toss.

Put greens on a plate and top with beet mixture. Sprinkle with pepper, walnuts and cheese.
