Introduction
Spicy delicious & very filling, without all the fat. Spicy delicious & very filling, without all the fat.Number of Servings: 3
Ingredients

8 oz. Ground turkey
3 Anaheim chili peppers
2 Tbs. Onion, chopped
2 Garlic cloves, minced
2 ts. Taco seasoning
1/8th ts. black pepper
Pam olive oil spray
1 oz. Cheddar cheese
Directions
1. Roast peppers (I use my broiler) until outter skins are blackened.
2. Put peppers in paper bag, seal, & let sit until cool enough to handle (about 15 minutes).
3. Remove skins on peppers, then make a pocket by slitting lengthwise. Remove seeds, membranes & stems.
4. Combine turkey, onion, garlic, pepper, & taco seasoning
5. Divide turkey into 3 servings & mold each to fit inside of each pepper.
6. Wrap peppers around turkey
7. Spray glass baking dish with Pam & place peppers inside.
8. Bake appx. 30 minutes in 350 degree oven, or until turkey is cooked completely through.
9. Divide cheese evenly over each & bake till cheese is melted.
Makes 3 servings
Serve over shredded lettuce & with Salsa.
