    15 oz can black beans, rinsed & drained
    14 oz can reduced sodium chicken broth
    15 oz can fire roasted diced tomatoes, with juice
    11 oz can Mexican-style corn, drained
    1 large green bell pepper, chopped
    1/2 medium onion, chopped
    1 tsp chili powder
    1/2 tsp ground cumin


Combine all ingredients in 3- or 4-quart slow cooker and stir. Cook on high for 3-4 hours or low 6-8 hours.

Sodium could easily be reduced by using frozen corn. This recipe is based on what I had on hand. It can be made vegetarian by substituting vegetable broth.

Feel free to adjust the seasonings to your family's tastes. I'm not a huge fan of super spicy foods.
