    1 lb chicken breast
    2 Tbsp olive oil
    3 cloves garlic (or to taste)
    1 can Muir Glen Fire Roasted Diced Tomatoes
    1 can Eden Organic No Salt Added Garbanzo beans, drained
    1 tsp dried oregano
    1 bay leaf
    crushed red pepper to taste
    salt & pepper to taste


Cut chicken into bite size pieces. Heat oil in pan. Add chicken and cook until no longer pink. Add garlic and cook for a few minutes. Add oregano, bay leaf, crushed red pepper (if using) beans and tomatoes and heat through and sauce is desired consistency. Salt and pepper to taste.
Makes 4 servings.
