Ingredients

    4 chicken thighs, boiled until cooked then skin and bone removed and then shredded
    1 4oz can diced green chilis
    1 15 oz can green chili enchilada sauce
    1 15 oz can fat-free refried beans
    1 cup cheddar cheese, shredded and divided
    8 flour tortillas

Directions

Mix together the chicken, green chilis and half the shredded cheese. Working with one tortilla at a time layer 1/8 of the refried beans then the chicken mixture inside. Roll as desired. Put 1/4 of the can of green chili sauce on the bottom of a 9x13 baking dish and move around so it coats the bottom. Place rolled enchiladas on top and repeat until all tortillas and chicken mixture is gone. Pour the rest of the sauce over the top of the enchiladas and sprinkle with remaining cheese. Bake at 375 degrees 20 minutes or until cheese is melted.
