    1/2 cup unsweetened applesauce
    1/4 cup brown sugar lightly packed
    1/4 cup agave honey
    1/2 cup egg substitute (or equivalent to 2 eggs)
    2 cups mashed banana
    1 tsp vanilla
    1/2 tsp salt
    1 3/4 cup whole wheat flower
    1 tsp baking soda
    1/4 cup hot water
    Walnuts mixed in or a couple on top optional (not included in calorie count)


Preheat the oven to 325 degrees F. Blend the applesauce, sugar, and honey. Add the egg substitute, bananas, and vanilla. Next, blend in the flour and salt. In a separate bowl mix hot water with the baking soda then add to the batter. Pour into a 12 muffin cup tin lined with paper cups (might want to spray with baking spray since there is no fat) and bake them for 23 minutes or until a tooth pick comes out clean. Remove from oven and put the muffins on a wire rack to cool for 5 minutes. Enjoy!
