Ingredients

    1 - can 14oz diced tomatoes
    1 - cup tomato juice
    2 - celery stalks
    1 - red bell pepper
    1 - cup water (add more if you want soupier)
    1/4 of an onion (about 1/2 cup) diced
    tsp oregano
    tsp thyme
    couple of dashes of hot sauce to taste
    tsp cajun seasoning
    2 tsp. chicken boullion
    turkey kielbasa or turkey smoked sausage
    3/4 cup quick brown rice

Directions

cut & dice bell pepper, onion, and celery.
cut kielbasa into coin-size bites.
throw all this into a pot, with the tomatoes, boullion, and water.
add spices, herbs, and hot sauce to taste.
cook on medium for about 20 minutes, stirring often.
then add the brown rice and cook for about 15 minutes, or until rice is done.
let sit for a few minutes to thicken.
