This is a good hearty, healthy muffin that would be good for breakfast or snacking. Enjoy!

Ingredients

    Pumpkin, cooked, 2 cup puree
    Whole Wheat Flour, 2 cup
    Egg, fresh, 2 large
    Granulated Sugar, .75 cup
    Fage Total Greek Yogurt, .66 cup
    Apple cider or juice, unsweetened, .33 cup
    Walnuts, .5 cup, chopped
    Carrots, raw, .33 cup, grated (1 med size)
    Raisins, .25 cup
    Coconut, raw, .25 cup, shredded
    Vanilla Extract, 1 tsp
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Salt, .75 tsp
    Cinnamon, ground, 1 tsp
    Pumpkin Pie spice, 1 tsp
    Nutmeg, ground, .5 tsp

Directions

Combine wet ingredients in medium size mixing bowl. Set aside.
Combine dry ingredients in large mixing bowl.
Combine wet ingredients with dry ingredients & mix thoroughly.
Pour batter into muffin tins that are either lined with cupcake paper or have been sprayed with a cooking spray, til 2/3 full.

Bake at 350 degrees for approximately 25-30 minutes. Makes 16-18 muffins.
