    2 pkgs Salmon Chunks
    2 c Crushed Crackers
    2 Eggs
    2 c Vegetable Mix

    Any Seasoning (ex. soul food seasoning, lemon pepper)


Chop your vegetables if necessary (should be small chunks). Mix everything in a big bowl. Make patties, place on cookie sheet. Top with seasoning of your choice. Bake at 350 for about 15-20 minutes, flipping once. Makes 6 large salmon cakes.

Note: For the recipe calculator, I used 2 medium eggs and the vegetables were a frozen Normandy-style blend. I've used fresh peppers & onions, stir fry mixes, it all works fine.
