    1/2 Cup Whole Grain Flour
    1/2 Cup Oat Bran
    1 Tbsp Baking Powder
    1/2 tsp Baking Soda
    1/8 tsp Salt
    1 Banana Mashed
    1 Egg, whisked
    1/4 C Brown Sugar
    1 tsp Vanilla Extract
    2 Tbsp of Healthy Oil (Coconut Oil) or 1/4 C Applesauce


Makes 18 Mini Muffins

I like to keep it simple. In a large bowl I add the banana & sugar, mash. I find the sugar makes it easier to mash the banana especially if the banana is not over ripe. Add all the wet ingredients and mix. Add all the dry ingredients and mix. Spray mini muffin tin with oil. I use a teaspoon to divide batter and add to muffin tin. Cook until can insert toothpick and toothpick remains dry. This will be about 12 minutes.
