A favorite brunch idea, with the blueberries - wonderful! A favorite brunch idea, with the blueberries - wonderful!
Number of Servings: 4


    2 cup whole wheat flour - sifted (or whole-wheat pastry flour)
    1 Tbs baking powder (3 tsp)
    1 tbsp baking soda
    1/4 tsp salt
    1 tsp cinnamon
    1 tsp vanilla
    1 egg
    1/4 cup blueberries
    oil or cooking spray as needed


Combine dry ingredients in a large bowl.
Add vanilla extract & egg
Add water, approx 1.5-2 cups, while stirring until batter is thick, not too runny unless you want thin pancakes
Gently fold in blueberries
Cook in Skillet on medium-low heat with spray of oil until golden, then flip. Serve when cooked
Good with jam or maple syrup!
