Introduction

This is a delicious Autumn morning treat when toasted and drizzled with maple syrup. The apple butter keeps things nice and moist while the nuts and raisins add dimension and of course, flavour! Ingredients


    1/2 cup of fed sourdough starter
    pinch instant yeast (optional)
    1/4 cup brown sugar
    3/4 cup apple butter
    1 cup flour
    2 cups whole wheat bread flour
    1 cup rolled oats
    1/4 tsp salt
    2 tsp pumpkin pie spice
    1 tsp vital wheat gluten
    2 tbsp melted butter
    1 tbsp vanilla
    1/3 cup sultana raisins, soaked in hot water and drained
    1/3 cup pecans, chopped
    1/4 cup toasted pumpkin seeds

Directions

Mix starter and yeast (if using) in a large bowl. Add brown sugar and apple butter and stir to combine well.
Add flours, oats, salt, spice and gluten and knead for 5 minutes. Let lest 5 minutes.
Add butter and vanilla and knead for 7-10 minutes.
Place in a greased bowl, turning to coat.
Cover and allow to rest 1 hour.
Knead in the raisins, pecans and seeds, place back into the bowl. Recover and allow to rest 1 hour.
Shape into a loaf and place into a greased loaf pan. Cover and allow to rise 1 1/2 hours.
Preheat oven to 350F.
Bake loaf 45 minutes. Turn out of the pan immediately and cool completely on a rack before slicing.
