Ingredients

    1.25 lb pork stew meat
    3 cups cooked pinto beans
    1 c chopped onion
    2 4 oz cans green chili peppers
    3 cloves garlic (or to taste)
    1 can diced tomatoes, no salt added

Directions

Cook pinto beans. Nutritional info has no added sodium. May cook with a bay leaf or other seasonings if desired.
When beans are about half done, begin slowly cooking pork with chopped onion and green chili peppers. After pork has browned, add just enough water from time to time to keep it from sticking to pan. Add tomatoes last, just in time to heat through.
Combine beans with rest of stew mixture.
Serve over rice, with salsa if desired, or can be served as a soup/stew in a bowl with or without rice, and with or without tortillas on the side.

This could also easily be cooked in a crockpot.
