Ingredients

1 cup sweet potato
medium cucumber, juiced (with skin on)
1 cup vegetable broth, low sodium
1 tbsp Basil
1 tsp Paprika
Directions
Bake sweet potato in skin till soft. Simplest way to do this is to poke holes in the skin with a fork and put in the microwave for 4 to 6 minutes on high. Takes a bit longer in the oven. When finished slice the potato in half and scoop the contents into the blender. Add the juice of 1 medium cucumber (about 3/4 cup) and 1 cup of vegetable broth, and blend on medium for 2 minutes.
Place in a pot on the stove and stir in 1 tablespoon Basil and 1 teaspoon Paprika. Cook for 8 - 10 minutes on medium or until hot then serve.
