Ingredients

    2 pounds boneless, skinless chicken breast or turkey breast tenderloins, all visible fat removed
    vegetable oil spray
    .5 cup barbecue sauce
    ,5 cup all fruit marmalade or spread such as orange, apricot, or plum.
    1 tsp powdered ginger (optional)


Directions

Serves 4: 1/2 per serving, plus 2 cups reserved
Rinse chicken and pat dry with paper towel. CUt chicken into bite-size pieces.
Heat a large skillet over medium-high heat. Remove fraom heat and spray with vegetable oil spray. Cook chicken for 3-4 minutes, or until tender and no longer pink in center, stirring occasionally.
Stir in remaining ingredients. Cook until heated through, about 3 minutes, stirring constantly.
