Number of Servings: 10


    2 cups all purpose flour
    4 tsp baking powder
    1/2 tsp salt
    1 T sugar
    1 T Apple Sauce (unsweetened)
    1 cup 2% milk
    1 cup water
    2 tsp vanilla extract
    4 egg whites, stiffly beaten


Sift the flour, baking powder, salt, and sugar together. Add the Apple Sauce, milk, water, and vanilla essence. Beat well. Fold in the stiffly beaten egg-whites and mix to blend.

Lightly spray a waffle iron with non-stick spray and pour some of the batter into the iron. Cook until golden on both sides.

Makes around 10 large square waffles. These waffles freeze well.

This recipe is good topped with fresh fruit. I like to cook a pear and an apple in the microwave with a little cinnamon and a tablespoon of pure maple syrup. Use the fruit and some more applesauce for a topping. I have not included the topping in the calorie count as I calculate it as to what I use.
