Ingredients

    One large eggplant
    One can crushed tomato 28 ounces
    1/2 cup mushrooms
    1/3 cup chopped onions
    1/4 Parmesan cheese
    1 tbl. olive oil
    1/2 teaspoon garlic powder or to taste
    1/2 teaspoon Italian seasoning

Directions

Chopped eggplant into bite size pieces and add to heated pan and olive oil. Add mushrooms and onions. Saute until tender. Add spices and tomatoes. Once heated add cheese and serve.
