    4 medium white potatoes, peeled and cut into chunks
    2/3 c milk
    2 tsp salt, divided
    1/2 tsp black pepper
    3 tbs light butter


In a large pot, combine potatoes and 1 tsp salt. Cover with cold water. Bring to a boil; reduce heat and simmer 15 minutes, covered, or until tender. Drain potatoes in colander.

Melt margarine in same pot over medium heat. Reduce heat to low and add hot potatoes to pot. Mash until smooth. Add milk, pepper and remaining tsp salt. Mash until smooth and fluffy.
