    Brown Rice (cooked - 6 servings)
    1 tbls. Olive oil
    2 tbls Grill Seasoning
    1 pound chicken breast meat (diced)
    2-3 tbls. Soy Sauce
    4 cloves minced Garlic
    1 large sliced Red Pepper
    Large sweet onion - diced
    1 can sliced Water Chestnuts drained
    1 cup frozen Peas
    3 tbls. Chipotle in Adobo sauce (about 2 peppes)
    2-3 tablespoons Honey
    1/4 cup real Maple Syrup
    1 cup chopped Cashews (no salt added)


Make Brown rice according to directions.

In large skillet, heat oil. Add chicken (diced), & grill seasoning. Cook till chicken is no longer pink. Add soy sauce, onion, garlic, & peppers. Cook 2-3 minutes, add water chestnuts, and peas. Add the chipotle, honey, & syrup. Toss to coat. Top rice with chicken mixture. Garnish with chopped cashews.
