Introduction

This is easy and a nice dish for fall when apples are harvested. I sometimes throw in some dried cranberries or raisins. Serve in bibb lettuce cups. This is easy and a nice dish for fall when apples are harvested. I sometimes throw in some dried cranberries or raisins. Serve in bibb lettuce cups.

Ingredients

    3/4 cup walnut halves
3 large apples, one red, one green, one yellow
1 1/2 Tbs freshly squeezed lemon juice
2 stalks of celery, peeled and sliced 1/2" on the diagonal
1/2 cup of fat free mayonnaise
    2 Tbs chopped fresh chives
2 Tbs fat free sour cream
1 Tbs minced fresh flat-leaf parsley leaves
    1 tsp splenda
    3/4 tsp grated lemon zest
    freshly ground pepper

Directions

Preheat oven to 350. Spread walnuts on baking sheet and toast in the oven for 8 to 10 minutes. Cool and break up into small pieces. Half, core, and cut the apples into 3/4" pieces, leaving the skin in tact. In a medium bowl, mix the apples with the lemon juice, celery and walnuts.

In a small bowl, whisk together, mayonnaise, chives, sour cream, parsley, sugar, and lemon zest and season with pepper if desired. Add the mayonnaise mixture to the apple mixture and stir to coat. Refrigerate if not using immediately.
