Introduction

Ingredients

1 Tblsp olive oil
1 cup minced onion
1 cup minced carrot
3/4 cup minced ham (ham steak works best)
1 lb ground bison (or beef, but bison is leaner and less cholesterol)
1 small can tomato paste
1/2 tsp lemon rind
pinch nutmeg
1/2 cup white wine
2 cups beef stock
1/2 cup half and half
Directions
Place olive oil in a nonstick pan, and add the minced onion and carrot. Cook them for a few minutes on medium low heat until they are soft. Add the minced ham and cook for another minute or 2. Add the ground meat and turn up the heat to medium, so the meat gets browned. Stir the meat in well, and break up any large pieces of meat.
Add the tomato paste, stock and white wine, and stir to incorporate the ingredients. Then add the lemon rind, pinch of nutmeg and turn the heat to low. Taste your sauce now to see if you need any salt--you may not depending on how much is in the ham, stock and tomato sauce. Simmer this for about an hour. Just before serving, add the half and half and stir well.
