Ingredients

    1 1/4 cups whole wheat flour
    3/4 cup cornmeal
    1/4 cup Splenda
    1/4 tsp salt (optional)
    2 tsp baking powder
    1 cup nonfat milk
    1/4 cup sugar-free apple butter (can sub for equal amount
    of apple sauce or vegetable oil)
    1/4 cup egg substitute (can sub for 1 beaten whole egg or 2 egg whites)

Directions

Preheat oven to 400 degrees.

In a mixing bowl, stir together all the dry ingredients, then add in the wet ingredients and stir until fully combined. Spoon into muffin pans (or muffin top pans), and bake until fully cooked, about 15 minutes.
