    4 red peppers
    .375 c. dry quinoa
    3 tomatillos
    1 red tomato
    four ounces cheese
    1.5 cups prepared near east whole grain blends chicken and herb


boil the pepper, once they've been cleaned, for 1-3 minutes.

mix all ingredients but the peppers together and stuff 1/4 of it into each pepper.Stand up in a lg muffin tin, Bake at 375 for 30 minutes.
