    1 c. whole wheat flour
    1 c. all purpose flour
    1 tbsp baking powder
    1/2 tsp salt
    1 tsp pumpkin pie spice (or use 1/2 tsp cinnamon and 1/4 tsp nutmeg)
    2 tbsp sugar

    2 large eggs
    2 c. fat free milk
    3 tbsp melted light margarine
    1/2 c. canned plain pumpkin (not pumpkin pie mix)


Makes 10 servings of 2 pancakes each

Sift together the dry ingredients in a large bowl. In a medium bowl, whisk the eggs and milk. Add the melted mararine and the pumpkin to the wet ingredients, and whisk together. Pour the pumpkin mixture over the dry ingredients, and stir just until blended a few lumps are okay.

Heat on a griddle at a medium-high temperature. Use 1/4 cup batter for each pancake. When they bubble on the top, flip them and cook the other side until brown.
