    12 Jumbo Pasta Shells
    1 container Ricotta Cheese, part skim
    2 cups microwaved fresh spinach
    1 large egg
    1 package shredded mozzarella cheese, part skim
    1 jar spaghetti sauce


Cook shells as directed on box. Drain and rinse with cold water to cool them down enough to be touched.

While shells are cooking, microwave 3/4 bag of spinach in a bowl with about 2 tsp of water. Mix ricotta, all but about 1/4 cup of the mozzarella, and egg with the spinach until all ingredients are distributed well.

Spoon the stuffing into the shells and place the shells in a greased baking dish. Once they are all stuffed, if there is leftover stuffing mix the jar of pasta with it, then drizzle over the shells. Sprinkle remainder of mozzarella over top and bake at 450 for about 30 minutes, or until the shells are heated through. To toast the cheese a bit, but under the broiler for about 3-4 minutes.

3 shells = 1 serving. Goes great with caesar salad and breadsticks.
