Ingredients

    3 T. olive oil
    1 small white onion, minced
    1/2 c. chopped zucchini
    1/2 c. summer squash
    1/2 c. cut green beans
    1/4 c. minced celery
    4 c. vegetable stock
    2 (15 oz) cans low sodium kidney beans, rinsed and drained
    2 (15 oz) cans white beans (Great Northern, low sodium if you can find them), rinsed and drained
    1 (14 oz) can diced tomatoes
    1/2 c. cattors
    1 1/2 t. oregano
    1 t. salt (original recipe calls for 1 1/2 t., nutritional info based on 1 t.)
    1/2 t. pepper
    1/2 t. basil
    1/4 t. thyme
    3 c. hot water
    4 c. fresh spinach
    1/2 c. small pasta (I use orzo)


Directions

Saute onion, squash, green beans, celery and garlic in olive oil 5 minutes or until onions are translucent. Add stock to pot plus beans, tomatoes, carrots, spices and water. Bring to a boil, simmer 20 minutes. Add spinach and pasta, simmer another 20 minutes.
