Ingredients

    1 cup shedded green cabbage
    1/2 cup shedded red cabbage
    1 small carrot
    1 green onion thinly sliced
    3 tbsp reduced fat mayo
    1 tbsp lemon juice
    2 tsp dijon mustard
    1/4 tsp sugar (I used sweetner)
    4 whole wheat tortillas (approx 8 inc)
    1/2 lb sliced deli smoked turkey
    1 small tomatoe, sliced
    kraft free or reduced cheese (if desired)

Directions

makes 4 servings
1. in small bowl combine the first four ingredients. combine the mayo lemon juice, mustard and sugar or sweetner. pour over cabbage mixture and toss to coat.
2. spoon cabbage mixture down the center of each tortilla. Top with turkey and tomatoe. roll up.
Diabetic exchanges; 2 very lean meat 1-1/2 starch, 1 vegetable 1 fat.
