    2 chicken breast halves and 1.5 cups sauce reserved from Two Way Border Chicken
    2 tbsp water
    8 6 inch corn tortillas, warmed
    .5 cup finely chopped red onion
    .5 cup nonfat or ligh sour cream
    .25 cup shredded fat-free or reduced-fat sharp Cheddar or Monterey Jack cheese (about 1 ounce)
    .25 to .3 cup finely snipped fresh cilantro


serves 4; 2 tortillas per serving

Shred chicken. Put meat, reserved sauce, and water in a medium saucepan; heat over medium-high heat for 4-5 minutes, or until thoroughly heated, stirring frequently. Remove from heat.
To assemble, spoon .25 cup chicken mixture down center of each tortilla. Top with 1 tbsp of onion, 1 tbsp sour cream, and 1.5 tsp cheese. Sprinkle cilantro. Roll tortilla jelly-roll style over filling and serve immediately.
