Ingredients

    Smoked Haddock (fish), 6 oz (Finnan Haddie)
    Flour, white, .25 cup
    Butter, unsalted, 2 tbsp
    Onion powder, 1 tbsp or chopped onion (optional)
    dash of nutmeg (optional)
    2 hard boiled eggs - chopped fine

Directions

Place smoked haddock in pot and approximately 3 cups of water and simmer for 20 min. RESERVE LIQUID. Strip fish off skin and put meat in a bowl.
Place in another pot the butter and melt. Add the flour to make a rue and slowly add in the reserved liquid from the Finnan Haddie until you have a smooth sauce. Add the onion powder and a dash of nutmeg if you wish.
Add the meat of the fish and chopped eggs to this and let simmer 10 min.

Serve hot.
